THE SAUCE REPORT: THE FLYING YOLK
The Flying Yolk
23889 Newhall Ranch Road, Santa Clarita

BREAKFAST DOES THE RUNNING
We had run the Be The Light 10K the night before.
By the following morning, we were feeling it.
Walking anywhere for breakfast?
Absolutely not.
So instead of going to breakfast, we decided breakfast could come to us.
The Flying Yolk.
Two breakfast sandwiches.
Two sides of tater tots.
Two fresh orange juices.
Exactly the kind of order you make when your legs are still reminding you about the previous night.

THE RECOVERY BREAKFAST
We ordered two different sandwiches so I could try both.
Purely for research, obviously.
First up was the Maple Fried Breakfast Sandwich.
A brioche bun filled with fried egg, melted cheese and smoked pulled chicken, which we chose instead of bacon.
We also ordered it without onions.
The brioche bun was soft and slightly sweet, which worked perfectly with the egg, cheese and meat.
The smoked pulled chicken turned out to be an excellent substitution.
Chicken.
Egg.
Melted cheese.
Nothing unnecessarily complicated.
Just a really good breakfast sandwich that delivered exactly what we needed.
Then came the second sandwich.
And this one had a lot more going on.
THE CALIFORNIA FRIED
The California Fried Breakfast Sandwich arrived packed with fried egg, crispy bacon, tomato, melted cheese, Fly Sauce and tater tots.
Not beside the sandwich.
Inside it.
There were still more tater tots on the side, just in case the sandwich itself wasn’t already committed enough to the cause.
On paper, that is a lot to fit between two halves of a brioche bun.
But everything worked together.
The crispy bacon brought the saltiness.
The tomato added some freshness.
The melted cheese and fried egg made it properly indulgent.
Then the Fly Sauce and tater tots brought the whole thing together.
It felt less like an ordinary breakfast sandwich and more like a complete recovery breakfast packed inside a bun.
After running a 10K the night before, that felt entirely appropriate.
THE TATER TOTS
Both sandwiches came with tater tots on the side.
They hit the spot.
But putting them inside the California Fried was the move that stood out.
There are moments when restraint is important.
The morning after a 10K is not one of them.
THE ORANGE JUICE
The fresh orange juice deserves a mention too.
It tasted genuinely fresh and worked perfectly alongside both sandwiches.
With this much egg, cheese, meat and potato involved, something bright and refreshing was exactly what the order needed.
It didn’t feel like an afterthought.
It completed the breakfast.
THE VERDICT
Both sandwiches were absolutely delicious.
The Maple Fried kept things slightly simpler, with the smoked pulled chicken, fried egg and melted cheese doing the work.
The California Fried loaded everything into one sandwich and somehow made it all come together.
Different approaches.
Same result.
The Flying Yolk served exactly the breakfast we needed without requiring us to walk any farther than the front door.
And it left me thinking about another Santa Clarita breakfast favorite.
Egg Plantation.
Egg Plantation has already earned a 9/10 from Secret Sauce.
The Flying Yolk offers a completely different kind of breakfast, but purely on the food, I thought it was right there alongside it.
Santa Clarita now has two very different breakfast spots sitting in the 9/10 club.
One gives you the full sit-down breakfast experience.
The other puts the recovery meal inside a brioche bun and delivers it to your door.
After the Be The Light 10K, The Flying Yolk was exactly what we needed.
Excellent sandwiches.
Tater tots that understood the assignment.
Fresh orange juice.
And absolutely no walking required.
SAUCE SUMMARY
Best For: A serious breakfast sandwich, especially when leaving the house feels overly ambitious.
Order: The Maple Fried and California Fried Breakfast Sandwiches.
Standout: The California Fried putting tater tots inside the sandwich and still serving more on the side.
Good to Know: The smoked pulled chicken worked brilliantly as a substitute for bacon on the Maple Fried.
Return Visit: Absolutely. Preferably after a morning that involves considerably less running.
SECRET SAUCE SCORE:

The Flying Yolk has officially joined Egg Plantation in Santa Clarita’s 9/10 breakfast club.
Turns out the best way to recover from a 10K is to let breakfast do the running.

BURRITO BELT CHAMPIONSHIP – ENTRY 17
Las 3 Marias
26881 Sierra Hwy, Santa Clarita, CA 91321
THE SAUCE GOES BIG
I didn’t even know Las 3 Marias was there.
Then its carne asada burrito arrived.
And there was no ignoring it.
This was one of the biggest burritos we’ve seen enter the competition.
Heavy.
Loaded.
And packed with enough filling to make an immediate statement.
The carne asada showed promise.
Four different salsas added another twist.
But once the tasting began, one ingredient started taking control.
Suddenly, the burrito’s greatest strength was threatening to become its biggest problem.
Did Las 3 Marias go big enough to shake up the Belt, or simply too big for its own good?
SAUCE EXPRESS - STOP 4: MAKENNA KOFFEE COMPANY
Makenna Koffee Company
23881 Newhall Ranch Rd, Santa Clarita, CA 91355
SAUCE EXPRESS IS BACK
It’s been a minute.
But the Sauce Express is officially pulling out of the station again.
First stop back? Makenna Koffee Company.
A packed Saturday morning, a menu that made choosing nearly impossible, and two drinks that couldn’t have been more different.
One definitely got our attention.
The other?
Well, you’ll have to read the full review.
And yes, the Mint Mojito was watching.

Friday understood the assignment.

Hope you like your Saturday with a little heat.

It runs 10am–4pm at the Jack Bones Equestrian Center.
Choosing a favorite chili?
That sounds like research to us.
SUNDAY, OCTOBER 11: BURGERS + SUNDAY BREWS
Sunday doesn’t have to mean the weekend is over.
Bomb Burger is pulling into Lucky Luke Brewing from 1–7pm, with Rocky Folk playing live from 4–6pm.

Nothing complicated here.
Just a pretty solid Sunday.
ON NEXT WEEK’S MENU
Bonchon Gets the Sauce
Next week, we’re heading to Bonchon.

Plenty of crunch.

Is it worth the Sauce?
Another Burrito Belt Challenger
The competition rolls on.
Another carne asada burrito enters the Belt with the leading group still waiting to be challenged.
Every category matters.
Can the next contender finally shake up the leaderboard?
